Tamari Roast Chicken


1.6 kg whole free range chicken

2 tbsp tamari

40 g butter

2 onions, cut into chunks

1 lemon, cut into chunks

2 carrots, peeled and cut into chunks

2 sticks celery, cut into chunks

5 cloves garlic, bruised

6 sprigs thyme

3 sprigs rosemary

Tamari Roast Chicken


Heat your oven to 220°C. Using kitchen scissors, cut the backbone from the chicken and cut it into pieces. Place the pieces of backbone in the base of a roasting tray with onion, lemon, carrot, celery, garlic and herbs. Rub the chicken all over with tamari and dot the skin with the butter. Roast for 45 minutes, then rest for 10 minutes. Baste the chicken with the buttery sauces to serve.
