Soy Ginger Glazed Salmon with Steamed Green Vegetables

Ingredients

  • 2 x 180 g skinless salmon pieces
  • 1 tablespoon olive oil
  • ½ Broccoli head cut into florets
  • 100 g Snow peas trimmed and peeled
  • 1 medium Bok choy halved and washed
  • 20g pickled ginger chopped optional

SOY GINGER MARINADE

  • 4 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • 1 tablespoon olive oil
  • ⅓ cup Kikkoman soy sauce or Teriyaki sauce
  • ⅓ cup honey

Soy Ginger Glazed Salmon with Steamed Green Vegetables

Method

  1. Place salmon in a medium bowl.
  2. In a small bowl or measuring cup, mix marinade ingredients.
  3. Pour half of the marinade on the salmon. Save the other half for later.
  4. Let the salmon marinate in the refrigerator for at least 30 minutes.
  5. In a medium pan, heat oil. Add salmon to the pan, but discard the used marinade. Cook salmon on one side for about 2-3 minutes, then flip over and cook for an additional 1-2 minutes.
  6. Meanwhile, steam or sauté all your green vegetables till cooked and toss with some olive oil and the pickled ginger. Set aside.
  7. Remove salmon from the pan and allow to rest. Pour in remaining marinade into the pan and reduce till it’s syrupy.
  8. Serve the salmon on a plate with the steamed greens and drizzle the sauce all over the salmon and serve
