Ingredients

Dried rice noodles: 100g

Zucchini: 1/2

Red and Yellow capsicum : 1/2 each

Olive oil: 1 tbsp

Stir-fry beef: 150g

White mushrooms: 8

Fresh baby corn: 8

Coriander / fried onions / salt / coarse black pepper: as needed

 

[A] sauce Mix

Kikkoman Stir Fry Asian Herbs Sauce: 3 tbsp

Water / Fish sauce: 1 tbsp each

Fresh lemon juice: 2 tsp

Grated garlic: 1 1/2 tsp

Cumin powder: 1/2 tsp

Method

  1. Soak the rice noodles according to the package instructions.
    Slice zucchini into slightly less than 1 cm thick rounds. Remove stems and seeds from both capsicum and cut into chunks.
    Cut them in half. Mix [A] sauce ingredients in a bowl.
  2. Add beef and cook until it changes color.
    After ,add zucchini, capsicum, mushrooms, and baby corn.
    Season with salt and black pepper, then cook until everything is slightly browned.
  3. Add rice noodles and [A] sauce mix, then cook quickly to coat everything evenly.
    Serve on a plate and garnish with chopped coriander and fried onions.
