Ingredients
- 2 x 180 g skinless salmon pieces
- 1 tablespoon olive oil
- ½ Broccoli head cut into florets
- 100 g Snow peas trimmed and peeled
- 1 medium Bok choy halved and washed
- 20g pickled ginger chopped optional
SOY GINGER MARINADE
- 4 cloves garlic, minced
- 2 teaspoons ginger, minced
- 1 tablespoon olive oil
- ⅓ cup Kikkoman soy sauce or Teriyaki sauce
- ⅓ cup honey

Soy Ginger Glazed Salmon with Steamed Green Vegetables
Method
- Place salmon in a medium bowl.
- In a small bowl or measuring cup, mix marinade ingredients.
- Pour half of the marinade on the salmon. Save the other half for later.
- Let the salmon marinate in the refrigerator for at least 30 minutes.
- In a medium pan, heat oil. Add salmon to the pan, but discard the used marinade. Cook salmon on one side for about 2-3 minutes, then flip over and cook for an additional 1-2 minutes.
- Meanwhile, steam or sauté all your green vegetables till cooked and toss with some olive oil and the pickled ginger. Set aside.
- Remove salmon from the pan and allow to rest. Pour in remaining marinade into the pan and reduce till it’s syrupy.
- Serve the salmon on a plate with the steamed greens and drizzle the sauce all over the salmon and serve
