Ingredients

thin sliced beef 300g

potato #3-5 (around 700g)

onion #1-2

carrot #1-2

snow peas #10-12

Sauce

oil 1 tbsp

dashi stock 600ml

soy sauce 60ml

mirin 60ml

sugar 1 tbsp

Method

  1. Wash and peel the vegetables.
  2. Cut potato roughly into about 4 cm pieces.
  3. Cut carrot roughly into about 3 cm pieces.
  4. Cut onion into wedges about 1-1.5cm wide.
  5. Heat oil in a pan or pot, fry the beef with a little salt and pepper.
  6. Remove the beef from the pan/pot, wipe the excess oil.
  7. Lightly sear the vegetables, add the dashi, sugar, mirin and soy sauce, then return the beef.
  8. Bring to boil over high heat until boiled, then reduce to low-medium heat. Scoop the impurities off the surface.
  9. Place a piece of foil or baking paper on the surface and continue to simmer.
  10. When the potatoes and carrots are cooked through, turn off the heat.
  11. Remove both sides of string from the snow peas.
  12. Cook them in the boiling water with a pinch of salt for about 30 seconds, cut in half, and place to decorate the dish.
