Ingredients
thin sliced beef 300g
potato #3-5 (around 700g)
onion #1-2
carrot #1-2
snow peas #10-12
Sauce
oil 1 tbsp
dashi stock 600ml
soy sauce 60ml
mirin 60ml
sugar 1 tbsp
Method
- Wash and peel the vegetables.
- Cut potato roughly into about 4 cm pieces.
- Cut carrot roughly into about 3 cm pieces.
- Cut onion into wedges about 1-1.5cm wide.
- Heat oil in a pan or pot, fry the beef with a little salt and pepper.
- Remove the beef from the pan/pot, wipe the excess oil.
- Lightly sear the vegetables, add the dashi, sugar, mirin and soy sauce, then return the beef.
- Bring to boil over high heat until boiled, then reduce to low-medium heat. Scoop the impurities off the surface.
- Place a piece of foil or baking paper on the surface and continue to simmer.
- When the potatoes and carrots are cooked through, turn off the heat.
- Remove both sides of string from the snow peas.
- Cook them in the boiling water with a pinch of salt for about 30 seconds, cut in half, and place to decorate the dish.
