Zesty Lime and Beef Gluten-free Noodle Salad

Ingredients
100g rice noodles (or soba noodles)
200-250g beef steak
salt and pepper, to taste
vegetable oil, for pan-frying
1/2 of an onion
1/4 of a carrot
50g purple cabbage
fresh corriander, chopped, to taste
roasted nuts of preference, to taste
(A) 2 tbsp Kikkoman Gluten Free Soy Sauce
juice of 1/2 a lime
1 tbsp sesame oil
1 tbsp honey
a pinch of coarse-ground black pepper
Method
- Mix together (A) ingredients (Kikkoman Gluten Free Soy Sauce, lime juice, sesame oil, honey, and black pepper) to make the dressing. Thinly slice the onion and soak in water for 5 minutes, then drain. Shred the cabbage. Chop the fresh corriander into 1-2cm pieces.
- Bring the beef to room temperature, then sprinkle with salt and pepper. Heat vegetable oil in a frying pan over medium to high heat, then sear the beef for 1 minute on both sides.
- Cook the rice noodles according to package directions, then drain and rinse in cold water. Plate.
- Slice the beef into thin, bite-sized pieces. Arrange the onions, cabbage, and beef over the noodles and drizzle with the dressing from step 1. Sprinkle with fresh corriander and chopped nuts to taste.
Key tip
A delicious and hearty gluten-free noodle salad! Roasted nuts provide a pleasant accent.
Beef shoulder (chuck) was used in this recipe, but any cut of steak can be used according to preference.
