Ingredients
4 slices thick-cut white sandwich bread (toast-slice)
1 large chicken thigh (300g)
100g cabbage, shredded
50g red onion
2 tomato slices (1cm-thick rounds)
4 slices tasty cheese (or other melting cheese)
a pinch of salt
a pinch of coarse-ground black pepper
1/2 tbsp vegetable oil
3 tbsp Kikkoman Sweet Chilli Ginger and Soy
20g salted butter
Method
- Cut the chicken thigh in half, then even out the thickness. Sprinkle with salt and pepper. Heat vegetable oil in a frying pan on medium heat, then place the chicken skin-side down and cook until golden. When the chicken is thoroughly cooked, wipe out excess oil from the pan with a paper towel and pour in Kikkoman Sweet Chili Ginger and Soy. Toss to coat the chicken evenly.
- Thinly slice the red onion against the grain, soak in water, then pat dry with paper towels.
- Assemble the sandwiches: Lay a slice of cheese on 1 piece of the bread, then layer on 1/2 of the cabbage & red onions, 1 tomato slice, and 1 piece of chicken. Top with another slice of cheese and finish it off with a slice of bread. Use the remaining ingredients to make the other sandwich the same way.
- Grill the sandwiches one at a time: Melt half of the butter in a frying pan on medium heat, then grill one side of the first sandwich until golden. Flip over and continue to grill. Once both sides are golden, reduce to medium-low heat, cover with a lid and cook for 1-2 minutes to allow the cheese to melt. Remove from the pan and cut in half. Grill the second sandwich in the same way.
Key tip
Grilling the sandwiches one at a time is easier and produces a better end result.
