Japanese-style Prawns and Avocado Sandwich

Ingredients

2 sandwich bread slices

9 prawns, peeled & boiled

1/2 of a hard-boiled egg

1 processed cheese slice

1 tomato slice (approx. 7mm thick)

1/2 of an avocado

20g purple cabbage

3 lettuce leaves (leaf or red lettuce)

a few drops of lemon juice

(A) 60g Japanese mayonnaise

10g Kikkoman Naturally Brewed Less Salt Soy Sauce

2 tsp roasted sesame seeds

Method

  1. Slice the hard-boiled egg and avocado into 7mm-thick slices. Sprinkle the avocado with lemon juice. Shred the cabbage with a mandoline.
  2. Mix together the (A) ingredients (mayonnaise, Kikkoman Naturally Brewed Less Salt Soy Sauce, and sesame seeds) in a small bowl.
  3. Spread one side of each slice of bread with the dressing from step 2. Layer the avocado, cheese, tomato, prawns, egg, cabbage, and folded-up lettuce (in that order) onto one slice of the bread and top with the second slice.
  4. Wrap the sandwich first in baking paper. Chill in the refrigerator for 20 minutes and then cut in half.
