Japanese-style Prawns and Avocado Sandwich

Ingredients
2 sandwich bread slices
9 prawns, peeled & boiled
1/2 of a hard-boiled egg
1 processed cheese slice
1 tomato slice (approx. 7mm thick)
1/2 of an avocado
20g purple cabbage
3 lettuce leaves (leaf or red lettuce)
a few drops of lemon juice
(A) 60g Japanese mayonnaise
10g Kikkoman Naturally Brewed Less Salt Soy Sauce
2 tsp roasted sesame seeds
Method
- Slice the hard-boiled egg and avocado into 7mm-thick slices. Sprinkle the avocado with lemon juice. Shred the cabbage with a mandoline.
- Mix together the (A) ingredients (mayonnaise, Kikkoman Naturally Brewed Less Salt Soy Sauce, and sesame seeds) in a small bowl.
- Spread one side of each slice of bread with the dressing from step 2. Layer the avocado, cheese, tomato, prawns, egg, cabbage, and folded-up lettuce (in that order) onto one slice of the bread and top with the second slice.
- Wrap the sandwich first in baking paper. Chill in the refrigerator for 20 minutes and then cut in half.
