Sweet and Spicy BBQ Prawns Skewers

Ingredients
24 peeled and deveined raw Prawns
1/2 of a green capsicum
1/2 of a red capsicum
1/2 of a yellow capsicum
1/4 of an ear of corn
(A) 3 tbsp Kikkoman Sweet Chilli Ginger and Soy
2 tsp whole grain mustard
1 tsp Kikkoman Naturally Brewed Less Salt Soy Sauce
a pinch of chilli powder
Garnish, to taste:
fresh coriander, chopped shredded purple cabbage ,lemon wedges,coarse-ground black pepper
Method
- Mix (A) ingredients (Kikkoman Sweet Chilli Ginger and Soy, whole grain mustard, Kikkoman Naturally Brewed Less Salt Soy Sauce, and chilli powder) in a small bowl. Preheat the oven to 250°C.
- Remove the stems, core, and seeds from the capsicums, then slice into large bite-sized pieces. Slice the ear of corn into 2-3cm-thick rounds, then cut into half-moons.
- Thread the skewers, alternating between Prawns and vegetables. Cook in the preheated oven until golden brown (approx. 5-6 minutes).
- With a pastry brush, glaze the skewers with the (A) sauce. Plate and serve with sides and garnishes to taste.
