Air Fryer Potato & Asparagus Fried Dumplings

Ingredients
300g potatoes
3 asparagus spears
60g onion
3 slices of bacon
½ tbsp olive oil
salt (to taste)
black pepper (to taste)
2½ tbsp mayonnaise
2 sprigs coriander (optional)
30 dumpling wrappers
1½ tbsp vegetable oil
Kikkoman Sweet Chili Sauce (as dipping sauce)
Method
- Peel the potatoes and dice them into 5mm cubes. Rinse in water, drain, and place in a pot with enough water to cover.
Bring to a boil over medium heat and cook for about 8 minutes until tender. - Slice the asparagus into 3mm rings.
- Heat ½ tbsp of olive oil in a frying pan over medium heat.
- Drain the cooked potatoes and return them to the pot.
Add a pinch of salt and mash over medium heat until fluffy. - Combine the mashed potatoes with the sautéed ingredients.
- Place ½ tbsp of filling in the center of each dumpling wrapper.
- Arrange the dumplings in the air fryer basket.
- Once golden brown, remove and plate.
