Air Fryer Potato & Asparagus Fried Dumplings

Ingredients

300g potatoes

3 asparagus spears

60g onion

3 slices of bacon

½ tbsp olive oil

salt (to taste)

black pepper (to taste)

2½ tbsp mayonnaise

2 sprigs coriander (optional)

30 dumpling wrappers

1½ tbsp vegetable oil

Kikkoman Sweet Chili Sauce (as dipping sauce)

Method

  1. Peel the potatoes and dice them into 5mm cubes. Rinse in water, drain, and place in a pot with enough water to cover.
    Bring to a boil over medium heat and cook for about 8 minutes until tender.
  2. Slice the asparagus into 3mm rings.
  3. Heat ½ tbsp of olive oil in a frying pan over medium heat.
  4. Drain the cooked potatoes and return them to the pot.
    Add a pinch of salt and mash over medium heat until fluffy.
  5. Combine the mashed potatoes with the sautéed ingredients.
  6. Place ½ tbsp of filling in the center of each dumpling wrapper.         
  7.     Arrange the dumplings in the air fryer basket.
  8.   Once golden brown, remove and plate.
