Ingredients

250g salmon fillets

1 avocado

60g coriander

1/4 red onion

1/2 tomato

1/2 tsp lemon juice

1 tsp olive oil

1 tsp cayenne pepper

2 tbsp Yakitori Gluten Free Glaze Sauce

4 tortillas

Mayonnaise, as needed

Method

  1. Cut the salmon into 2 cm cubes and toss with cayenne pepper until evenly coated. Remove the skin and pit from the avocado, then cut it into 1–2 cm cubes and toss with lemon juice.
  2. Roughly chop the coriander and thinly slice the red onion, then cut the tomato into 1 cm cubes.
  3. Heat olive oil in a frying pan over medium heat and cook the salmon until done. Remove from heat and add the Yakitori Gluten Free Glaze Sauce, tossing well to coat.
  4. Place coriander in the center of each tortilla and drizzle with mayonnaise. Add the salmon, avocado, red onion, and tomato on top. Fold the sides of the tortilla inward and roll from the bottom to wrap it up.
