- 50mL water
- 2 long red chilies, seeds removed and roughly chopped
- 1/2 cup brown sugar
- 1 tbsp grated ginger
- 1 kaffir lime leaf
- 4 cloves garlic, grated

Quick Basting Sauce
Method
- Put all the ingredients into a small pan on a medium heat to reduce for about 15 minutes. Blitz the sauce with a stick blender. The sauce will keep in the fridge for a few months.
