50g Koji Paste

50ml Kikkoman Soy Sauce

50g wild honey comb

Mountain Pepper Leaf

Wild Honey & Soy Glazed Quail

Method

Begin by rubbing the Quals with the Koji paste. Then place a heavy cast iron pan on the coals, heat until smoking. Add the sesame oil and quals then begin to caramelise. (don’t worry if the Koji burns a little this just adds another depth of flavour) add the Honeycomb, deglaze with the Mirin. Finish with the soy sauce and herbs.
